Through my connection with QMS Scotland, I have had the opportunity to represent the butchery industry at various events, including Scotch Lamb promotions, where I have educated farmers and the public on the quality and sustainability of Scotch Lamb. As part of my professional development, I traveled to Ireland alongside experienced butchers and shop owners to study Irish butchery techniques and industry practices. This experience allowed me to gain valuable insights, which I have successfully implemented at Blair Drummond Smiddy to refine our processes and enhance product offerings.
